Jerusalem artichoke (helianthus tuberosis l.) Is a tuberous rooted perennial. Native Americans grew it for centuries as a staple food. Jerusalem artichoke flour (JAF) is a concentrated source of fructooligosaccharides, useful prebiotics that promote the growth of beneficial bacteria in the human digestive tract. Jerusalem Artichoke Flour has a wonderful nutty flavor and does not contain preservatives or fillers. Jerusalem Artichoke Flour also works as a blood sugar stabilizer for people with Diabetes by creating a natural insulin effect in the body.*

Fructooligosaccharides (FOS) are naturally occurring simple carbohydrates found in Jerusalem artichoke. FOS are neither digested nor absorbed by humans; instead, they encourage the growth of bifidobacteria - one of several beneficial strains of colonic bacteria - and discourage the growth of most undesirable bacteria in the colon. Regular intake of Jerusalem artichoke, a food rich in FOS, may help reduce the risk of chronic disease and promote a healthy intestinal system. Other studies suggest that FOS may also help with the absorption of calcium in the body. The inulin present is valuable also as a source of fructose for diabetics. Jerusalem artichokes are classified in the division magnoliophyta, class magnoliopsida, order asterales, family asteraceae.

Edgar Cayce Quotes:

"We would find, too, that certain characters of vegetables will be the more healthful; as the Jerusalem artichoke should be a part of the meal at least once or twice a week. The activity of the adrenaline from these will be most beneficial to the system." - Edgar Cayce

"The Jerusalem artichoke that has been indicated is for the pancrean activity with the kidneys; for, from the amount of insulin [inulin? insulin reaction?] in same, this will be inclined to make for a change in this activity through the body, thus reducing the pressures in all of the blood supply and the general nerve system - that is, the pressures from poisons, see?..." - Edgar Cayce

"Also we find that the use of the Jerusalem artichoke in the diet occasionally would be beneficial for the body. For, this will aid in stimulating the activity for a coordinating between the liver AND the kidneys - which tend to make for greater disturbances at times by their lack of coordinant activity." - Edgar Cayce

"The Jerusalem artichoke should be a portion of the diet each day. This would be taken preferably cooked, but it may be taken raw if preferable. The insulin from same - as it is easily assimilated for the activities not only of the pancreas and spleen and liver activity but - will aid in reducing the inclination for the inflammation and pus activity in the kidney itself. Artichoke should be taken each day, - that is, the tuber of the Jerusalem artichoke, see?" - Edgar Cayce
