Everyone's heard about the dangers of High Fructose Corn Syrup - Coconut nectar is mainly sucrose, which the body digests more slowly. Because this delicious, unrefined sweetener doesn't cause insulin spikes and blood-sugar crashes, you won't experience the post-sugar blues, unhealthy cravings, and weight gain that typically happen with sweet foods. And unlike regular table sugar, Coconut nectar is loaded with minerals, enzymes, more than 14 amino acids and other nutrients. These nutrients also help slow down absorption of the sucrose, which is why Coconut nectar is so low on the glycemic index: GI 35!(Most commercial Honeys are GI 55 and Cane Sugars are GI 68)
Refined cane sugar is a chemically-pure crystal of 100% sucrose comprised of short chain saccharides (which digest quickly, causing blood sugar spikes). Lowering our intake of high-glycemic foods, such as cane sugar, has benefits for weight control and improving glucose and lipid levels in people with Diabetes.
Coconut nectar, on the other hand, contains much less sucrose, and this sucrose is mostly comprised of long-chain saccharides, which the body must break down, so they are absorbed more slowly. (Coconut nectar also has additional small percentages of fructose and glucose.)
