The hardy sugar beet appears to be one tough tuber, but it's really a soft sweetie on the inside. Strip away the rugged exterior and you'll find that sugar beets have a high sucrose content, up to about 20% of the unprocessed plant root.
Organic Beet Sugar is the refined extract of organic sugar beets and is 99.7% sucrose, making it an ideal 1:1 substitute for Cane Sugar in most recipes. Please note that Beet Sugar melts at a higher temperature than Cane Sugar. Persons with intolerance to refined Cane Sugar will find Beet Sugar to be a worthy replacement. Beet Sugar is 100% pure, natural Beet Sugar with no added ingredients.
